茶叶水分检验茶叶水分检验moisture inspection of tea茶叶水分检验(moisture inspeetion oftea)茶叶检验之一。检侧成品茶中水分含量的技术措施。茶叶水分含t对品质变化起主要作用，水分检验列为国家对出口茶叶的重要检验项目之一。1981年3月中华人民共和国对外贸易部和国家进出口商品检验局联合制订颁布的《茶叶WMB45一81》部哲行标准规定采用恒量法(103士2℃法)和快速法(120士2℃一小时法与130士2℃27分钟法)。其中恒量法与国际标准化组织150 1573方法相似。水分检验一般采用快速法，如发现检验结果有问题或执行仲裁检验时，必须用恒量法为最后依据。103士2℃恒量法又称仲裁法。在已知重量的铝盒内，准确称取混匀试样10克(I 50规定取样约4克)，然后将铝盒移入预热至103士2℃烘箱内，烘干四小时(150规定第一次为六小时)。加盖后取盒，置于干燥器内，冷却、称重。再移置同样温度的烘箱中烘干一小时，冷却、称重，如此重复操作，直至恒重，计算失水百分率。120土2℃一小时法操作方法同上。称取试样10克，移入预热至120℃供箱内，温度回升至120oC时起算，保持一小时，取出冷却并称重，计算失水百分率。130士2’C 27分钟法操作方法及用具同上。称取试样10克，移入预热至13《)’C烘箱内，温度回升至130’C时起算，烘干27分钟，取出，冷却称重，计算失水百分率。日本茶叶水分检验有公定的98一100℃下干澡至恒量法，有为贮藏及包装试验的定量法，即在常压110℃下干燥5小时法。近年来研究使用FD一IB型红外线水分计的快速简便法，即采用一个185瓦灯泡固定在距试样3厘米的位置，根据茶叶水分多少，可在温度调节刻度5一6之间调节灯泡温度，只需20一25分钟就可取得精度较高的水分定量值。茶叶中水分分结合水和游离水，水分活性与游离水有关。微生物在纯水或干操条件下都不能生存，茶叶中游离水不是纯水，故能寄生徽生物，侧定活性水分可预知茶叶发称点和非酶性揭变的变化规律，从而控制茶叶水分，保护茶叶品质。(英息琴)
